Butter Toffee

 

The sweet taste of homemade butter toffee is one of my favorites, although very rich.  A small piece is plenty.  I have made this every year for over two decades for our Christmas gifting.

Butter Toffee

Ingredients:
2 cups butter
2 cups white sugar
1/4 teaspoon salt
2 cups chocolate chips (I like dark chocolate!)
1 cup finely chopped almonds (or any other nut you'd like)

Directions:

In a large heavy bottomed saucepan, combine the butter, sugar, and salt. Cook over medium-low heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 295°F.   Watch and stir to avoid burning.

While the toffee is cooking, cover a large baking sheet with aluminum foil and butter.  Once the toffee reaches the proper temperature and color, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Once it's softened, use a knife or spreader  and evenly spread the melted chocolate into a thin even layer. Sprinkle the nuts over the chocolate, and press down on the nuts slightly. I use the flat side of a metal spatula to push it down.


 
Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.
