Oh, yummmm! We used to go to a restaurant in our small town that served bread with chimichurri sauce as their signature appetizer. Sadly, they went out of business and I have missed this flavor. I've tried it at other restaurants and they have all just missed the mark. I decided to try my own hand to create this flavor palette and so excited to have found something very similar.
Most restaurants serve this as a marinade with red meat (steaks, tri-tip, etc.), but as I shared above, it tastes delicious with some homemade bread.
Before I forget how I made it, I'm adding it here on the blog!
INGREDIENTS:
1 bunch of fresh cilantro
4 green onions
3 fresh garlic cloves
1/2 cup olive oil
3 TBLS white wine vinegar
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/8 tsp course ground pepper
DIRECTIONS:
- Wash & dry cilantro, onions, and garlic and finely chop
- Add oil, vinegar, red pepper flakes, salt & pepper and stir all ingredients together.
- Refrigerate for an hour to marinate the flavor.
Optional: Instead of hand chopping, use a food processor to create a creamy sauce.
