Biscuit style Hot Cross Buns


As the pandemic continues to quarantine us at home, our usual adventure out to buy some sweet bakery made Hot Cross Buns for Easter was paused this year.  Quite honestly, I had tried for years to buy them without the raisins (I do NOT like raisins) and they said they couldn't meet my request.   This seemed like a perfect year to seek out a simple homemade option using ingredients I happened to have on hand.  Ingredients are very scarce, and I'm carefully rationing.

Hot Cross Biscuits

Ingredients:


Biscuit base mix -
(using pulse mode of food processor, mix ingredients until finely blended.)
3 cups flour
1 ½ T baking powder
½ T salt
½ cup shortening (I used butter flavor)

1/4 cup sugar
1½ tsp. cinnamon
1 1/3 cup milk

Directions:

Preheat oven to 450ºF
  1. Mix biscuit base mix in food processor.  In medium size mixing bowl, place biscuit base mixture and add additional ingredients and mix until dough forms.  
  2. Press and roll flat and cut with biscuit cutter.
  3. Brush with melted butter and sprinkle a bit more sugar on top to your liking.
  4. Bake for approximately 9 minutes in preheated oven.
Icing:
¾ cup powdered sugar
1 T milk

Add icing into bag of your choice, and pipe onto cooled biscuits.

Need a piping bag?  Use a ziplock sandwich size bag and snip the corner.
